Peach Pie Overnight Oats

Prep + cook time: 10 mins (+ overnight refrigeration)

  • 1 large peach (220g)
  • 3 cups (840g) high-protein natural yoghurt
  • 1 cup (90g) rolled oats
  • 1 tbsp chia seeds
  • 2 tsp vanilla extract
  • 1½ tbsp maple syrup
  • ¼ cup (60g) reduced-fat ricotta
  • ¼ cup (40g) sultanas
  • 1 tsp ground cinnamon
  • 1 tsp finely grated
  • lemon rind
  • 2 tbsp chopped pecans


  1. Halve peach, removing stone; reserve one-third for serving. Cover and refrigerate until required. Finely chop remaining peach. Combine chopped peach with yoghurt, oats, chia seeds, vanilla, 1 tbsp of the maple syrup, ricotta, sultanas, cinnamon, rind and 1 cup (250ml) water; mix well. Cover and refrigerate overnight.
  2. Divide mixture among four glasses or jars. Top with reserved peach, cut into thin wedges, and pecans. Drizzle with remaining maple syrup.
